The Raw Bakery February 2005 Newsletter - The Joy of Eating Raw Foods AND healthy Cooked Foods !

The Joy of Eating Raw Foods AND Healthy Cooked Foods.

Eating more raw fruits and vegetables is very important for our health and well being and this amount should be at least 60 % of everyone’s diet, preferably 70-85 % and if you feel balanced about it than you could go 90-100 % raw. This article wants to explain why it is ideal for most people to stay in the 60-90 % range of the raw food/cooked food ratio and why it is very difficult for the average person, including me, to eat a pure 100% raw diet.

100% Raw Food is the Truth, but so is Transition.

It is very important to learn to enjoy the newly found raw dishes comprised of fruits and vegetables. This needs some time. Intellectually we know raw food is good for us and raw dishes can taste good too. But are we really happy and feel the joy of eating an all raw diet?!

For generations we developed the habit of finding sensory satisfaction in cooked foods and we are told to find the same happiness in an all raw diet overnight. However this is very difficult. The Body/Mind/Soul connection has to be gradually accustomed to this change.

It is important to still enjoy the cooked food portion of your diet, which in my opinion is very much connected to an inner satisfaction that is sometimes difficult to get from just eating a variety of raw foods. Transition is the keyword here and you can take time for transition.
Anyone neglecting the important aspect of transition is doomed to end in a blind alley of “unhappy eating syndrome” or replacing the 100% raw diet with a form of religion & cult. Instead of promoting the raw diet as a way of life or lifestyle, I recommend everyone to see it more as a down to earth approach to physical well being. Also I recommend everyone to detach the raw diet from TOO MUCH (the stress is on too much) spirituality, esoteric talk etc, because this is diverting and often misused.

Generational  Transition
By transition I suggest several years & decades, even generations. You may talk about generational transition Our bodies & minds are accustomed over thousands of years to utilize life force from cooked foods & raw foods. Though raw foods have the highest amount of life force, it may not all be in the form our body/mind apparatus is best to use optimally. So I again suggest to eat both, mostly raw with a percentage of cooked, appealing whole foods. However Dr. med Bruker, Germany's most renowned health food doctor also knew the importance of putting people on a temporary all raw diet when necessary to achieve immediate healing results in very sick people. He healed thousands of people from severe intestinal diseases and other severe civilization diseases. After curing people he allowed to bring back in some cooked whole foods or remain all raw whatever the person
wished.

It is important to listen to yourself and see what is best for you. If you here people talking about eating only 100% raw foods than yes this is very exciting to here and contagious and an ideal. Are we personally there yet?! That's where we have to listen to ourselves. Maybe we still want to eat some cooked foods. Don’t suppress the desire for cooked foods! If you still desire cooked foods it's better to eat them than to suppress. This can make sick too, if you force (subconsciously or consciously) yourself to an all raw diet, just because some people have catapulted themselves into the limelight and talk about it. However I can't mention too often, if you eat cooked you have to eat the right kind. The God/ Goddess of perfect health will not condemn us to eternity for eating still some whole cooked foods. It is important to be honest to ourselves and not pretend we are already
perfect raw foodists.

Eating a 70-80 %  raw and 20-30 % whole cooked food diet IS A DIET in itself. You can call it The Natural Diet for our times. This diet is perfectly suited for our present time, it balances people, does not deprive them,  makes and keeps them healthy. And Dr. Bruker's teachings are living proof that one does not get sick with this way of eating.  Further down the road the cooked food portion may decrease and the raw food portion may increase naturally, but it will take time for the majority of the population. How many people who have ever heard about the raw diet are 100% raw anyway?! 99.9% of all people ever heard about the raw diet are still eating more or less cooked foods.

But cooked foods make sick you say and you don't want to get sick! But Dr. Bruker says not all cooked foods make sick !!
Dr. Bruker, Germany's most renowned health food doctor (a real medical doctor). analysed very logically that there was a time when people were eating cooked foods and they didn't get sick from eating them. Statistics show that diseases such as Cancer, Diabetes, Heart Attacks, Obesity, Allergies, Intestinal diseases, Tooth Decay etc. started to occur just around 1900, the time when processed cooked foods were introduced into our diet.

Few people know that white flour (our daily bread and desserts) was invented at the end of the 19th century. Along with that a mass production of white sugar started at that time (sugar was invented around 1800, but mass production started later). Meat consumption today is more than 15 times than what it was a  100 years ago and dairy consumption is about 25 times higher per person than a 100 years ago.
Dr. Bruker himself ate 80-90% raw for most of his life, with a little butter, a little cream in his diet until his passing 3 years ago at age 92 (Regarding veganism Dr. Bruker says that an all vegan diet with no animal products is possible without health risks). He had all his original teeth and he died a very natural and peaceful death. The institute for Health Advice in Lahnstein, Germany which he founded trained over 2200 certified health specialists under his supervision. Dr. Bruker's work continues under Dr. med Biermanns  teaching a diet of mostly eating raw foods and for enjoyment still eating some whole natural cooked foods as they were eaten before the invention of processed foods. You can visit their site by going to our link on our website under Dr. Bruker.

Keep the balance
My message is to please not feel guilty about eating cooked foods in these busy times of raw food promotion in the news and books etc.  Start eating more raw fruits and vegetable salads and have your cooked whole food portion with great fun. Please enjoy it. Eat your cooked foods preferably after the raw food portion of your meal. Make it a habit to have a larger vegetable salad. A nice juicy dressing helps to eat more chopped and shredded vegetables. Spinach and beets are very nutrient rich. It is quite easy to have mainly raw foods only for breakfast and lunch. A nice cooked whole food meal is a good idea for the evening. Or if you are retired or a stay home person you could have a larger cooked food portion during lunch time. Your desserts should always be healthy etc, with no processed sugars and processed flours. If you still consume bread make it a habit to read the ingredient
labels in your health food store and make sure it is 100% whole grain bread. I suggest breads from the company Food for Life/sprouted baked breads. Please read the second topic for menu suggestions.

2. Menu suggestions by Ibrahim Gencay

Just recently I had so much fun with eating cooked foods that I want to talk about it.
For dinner after a hard long day of work we had a large vegetable salad made with fresh spinach leaves, tomatoes, cucumber, red onion, carrots etc. with Extra Virgin Olive Oil and fresh lemon juice, sea salt  and a pinch of black pepper. By large I mean really large, something for King Kong.
What came next was so simple, yet so delicious and satisfying it just blew my mind away. Homemade burritos. We bought those sprouted grain tortillas from Food for Health, 100% organic whole grain, warmed them up in the oven, filled it with a little bit of warm brown rice, organic yellow corn  and a little bit of organic cheese. The cheese melted by itself in the burrito.
Both my salad and the burrito/s were incredibly satisfying. This dinner was probably 65 % raw and 35 % cooked, because I had 2 medium sized burritos.

Just recently I prepared dinner at home. The menu comprised first of a large mixed vegetable salad (a variety of greens and root vegetables mixed together). I prepared two  very simple dips for the salad and for the upcoming cooked dish. Number one was a very simple guacamole and the other a raw sour cream dressing made from soaked sunflower seeds, onion and lemon juice. So far everything was raw. And then we had brown rice, hmmm with guacamole again and alternatively with the “sour cream. It was rather festive and then finally I had a delicious piece of 100% sprouted whole grain English muffins from Food for Life again with organic pasteurized butter. Well this is not usual everyday. Variety of food is very important too. This dinner was probably 80 % raw and 20% cooked.

I hope this is inspiration for you. It is important to get healthier and heal ourselves with raw foods. Cooked foods are still a welcome addition to a balanced diet.
